White Collar Chocolate Cake (Another WCC!)

A fan of the gluten free diet?  Been diagnosed with Celiac disease?  Then try this CONcoction!

Ingredients:

1 ripe banana (should be easy to procure as CDR serves them weekly)

2 tbsp butter (another item to easily obtain from CDR as the pats are served daily with meals) OR peanut butter (this you will need to purchase from Fed Mart)

2 tbsp cocoa powder (aka hot chocolate mix)  This you will also need to purchase from CDR or borrow from a camp mate that doesn’t share your M Stew tendencies and will happily exchange some hot cocoa mix for a share of your WCC Cake

Chocolate Chips 

For an extra layer of decadence consider adding any (or all!) of the following to the top of your cake)

Optional toppings: M & Ms, ANY chocolate candy bar chopped, crushed candy cane, cut peanut butter cups…you get the drift

Instructions:

Grease microwave safe mug (use a butter pat).

If you don’t have a mug consider a small microwave safe bowl.  If you have to use a bowl you will need to increase the ingredients used.  If twice the size of a standard mug then double the ingredients.

Mix all ingredients (except Chocolate Chips and optional toppings) until smooth.  This means mushing up the banana and letting the butter soften so that you can mix into a batter.  No lumps!

Add chocolate chips last by lightly working into the batter.

Sprinkle chocolate chips (and anything else your sweet tooth craves) on top

Microwave for one minute

Congrats!  You have a paleo approved, gluten free dessert (or snack!)

You don’t need to let cool too long as there are no eggs so you can even eat a bit runny.  Grab your spoon and ENJOY!
