Medellin Mixture (White Collar Club Cookbook Recipe)

For our friends from the South, or those that just want to re-live their vacations in Cabo, try this camp friendly receta for Bean and Rice Dip or more familiarly known as Medellin Mixture.  An easy recipe for those that are cooking challenged but hankering for a comforting snack to munch on while watching the latest Real Housewives fight scene…oops, I mean episode.

Ingredients (from Commissary of course):

1/2 Bag Rice

1/2 Bag Refried Beans

1 oz Cream Cheese

Tablespoon (or two!) Queso Cheese Spread

Bag of Tortilla Chips

Instructions:

  1. Cook rice and beans separately in microwave (follow instructions on packets)
  2. Mix 1/2 bag cooked rice and 1/2 bag refried beans in large bowl
  3. Add a few tablespoons of Queso and Cream Cheese to the mixture
  4. Lightly stir together cheeses with rice and bean mixture
  5. Use chips to scoop out mixture
