Layered Chicken/Tuna or Bean Dip

Several hours until the big game? No problem. Grab these ingredients before settling in and, better yet, double the recipe to share with your Camp mates!

Ingredients:

1 Package Chicken (Starkist or other generic brand, cooked)

1-2 Tablespoons Buffalo Hot Sauce (depending upon taste)

1 Teaspoon Lemon Juice

Salt and Pepper to taste

I Package Mozzarella (shredded)

I Teaspooon Minced Onion

2 Teaspoons Bacon Bits

Jalapeno Peppers or Gardenia Peppers chopped (quantity depends upon taste preference)

Crackers

Several bowls and one Tupperware-like container

Instructions:

Empty drained chicken packet into bowl. Mix in buffalo hot sauce, lemon juice, salt and pepper. Set aside.

In separate bowl shred mozzarella. Set aside.

In separate bowl mix together onion and bacon bits. Set aside.

In separate bowl chop peppers. Set aside.

Now you are ready to layer!

In a small container (e.g. Tupperware) layer from the bottom up. Start with chicken mixture. Put 1/2 of it on bottom of container. Next layer add 1/2 of shredded mozzarella. Next layer 1/2 of onion/bacon mixture. Next layer 1/2 of chopped pepper mixture. Repeat until all ingredients have been used. Some people like to chill and serve cold. Chill for 1.5-2 hours. Others like to eat hot. Put in microwave for 20-30 seconds or until cheese is melted. Whatever your preference, enjoy with your crackers! By half time you will be the most popular in the TV room (if you share).

Substitutions:

If you aren’t a fan of chicken, substitute a drained tuna packet and eliminate the buffalo hot sauce. More of a veggie head? Eliminate all meat altogether and add a bottom layer of cooked beans. Don’t like beans either? Start bottom later with peppers and layer mozzarella on top then onion/bacon mixture.
