Crimson Cookies

Club Fed CONcoctions range from the basic (Crimson Cookies) to the elaborate ( Quinoa with Chicken, Vegetables and Almonds).  Let’s start with the basic.

Looking forward to the weekend movie and not in the mood for caramel popcorn again….well, how about a batch of delicious “no bake” cookies?  That’s right, no baking required and they will certainly satisfy your sugar craving.

First, gather the following ingredients from either bartering with your fellow staycationers or purchasing them in Fed Mart:

Trail Mix/ Granola/Oats/Cereal/Dried Nuts

Sugar (2 cups)

Peanut Butter (1/2 cup)

Salted Butter (4 tbsp)  (hint…gather up those daily wrapped pads you receive at every meal)

Creamer (the equivalent of 1/2 cup milk)

One Dark Chocolate Bar (optional)

Now that you have all of the goods, mix the creamer, sugar, butter, peanut butter and chocolate bar with a touch of hot water in your plastic baking dish and melt this down to a rolling boil in the microwave in your dorm.

You want the mixture to be smooth  because if it’s too runny the cookies won’t harden.  Should this happen, add more peanut butter.  If it’s too stiff then add a little more hot water and butter.

Remove from the microwave and stir thoroughly.  Your mixture should appear silky.  Now you are ready to add granola and/or trail mix and/or cranberry almond cereal and/or dried nuts.  Whatever floats your boat.  You just want them fully coated with your heavenly CONcoction.

Take a tablespoon and drop your “dough” on a cookie sheet (at Club Fed this could be a cardboard cover or Tupperware lid) and allow them to harden.  This is where you need to be patient.  At this point (about 5 minutes so far) you are ready to pop these puppies into your mouth but you will need to wait (ideally) for an hour for them to cool and harden.

That’s it…simple, straightforward and DELISH.

**Side note….anyone who has sugar issues (e.g. diabetics) should probably avoid this snack.
